Identification of bacterial Clostridium strains isolated from cheese

Byl analyzován soubor 40 kmenů, které byly izolovány z mléka a sýrů s pozdním duřením. Pomocí rodově specifické PCR bylo potvrzeno zařazení kmenů do rodu Clostridium. Pomocí druhově specifických PCR bylo 5 kmenů zařazeno do druhu Clostridium butyricum a 26 kmenů do druhu Clostridium tyrobutyricum. Variabilita jednotlivých kmenů v uvedených druzích byla posouzena pomocí rep- PCR a RAPD.

PCR methods were used to analyse and identify the collection of 40 bacterial strains isolated from milk and late-blowing cheeses. It was proved that all of the strains belong to Clostridium genus. Species identification was achieved for 31 strains, where 5 strains were identified as Clostridium butyricum and 26 strains as Clostridium tyrobutyricum. Variability of strains in the species was evaluated using rep-PCR and RAPD.
