Whey is an important surplus product of food industry. Based on the point of view, huge quantities of whey produced worldwide can represent an environmental problem with its disposal, or, due to the fact that whey is rich in fermentable nutrients, it can be considered as an attractive substrate for biotechnological production of various industrially interesting products.
