Original Abstract

Extracellular polymeric substances (EPS) are increasingly studied for their bioactive properties and diverse applications, yet yeast-derived EPS production remains limited due to low yields. The aim was to optimize isolation and analysis methods for all EPS fractions and evaluate the production potential of other metabolites produced by red yeasts based on different carbon sources. Sporidiobolus pararoseus showed the highest EPS production on mannitol, yielding 10,44±0,29 g/l of dissolved EPS and 8,79±0,48 g/l of attached EPS, demonstrating its strong capacity for EPS biosynthesis under these conditions.
