Original Abstract
A kinetics of the fermentation of glucose to lactic acid by a strain of Lactobacillus plantarum have been studied. Several models previously published were identified by a parameter optimization with an experimental data. A selection of the best studied mathematical expression for time dependences of bacterial growth and product formation was practised statistically. Results were applied to a simulation of continuous process.
