Probiotics have been part of the human diet for centuries and are currently a popular topic. While probiotics slow the growth of pathogenic microorganisms in the digestive tract, essential oils destroy them. Combining plant extracts and probiotic strains may result in a synergistic effect. This study observed the effect of media enrichment with some plant essential oils (thyme and oregano) on growth and metabolism of some probiotics (Lactobacillus, Bifidobacterium). The production of lactic acid and the antimicrobial activity against selected bacterial strains were analysed. Some combination of probiotics, prebiotics and essential oils were encapsulated into microparticles, and their stability and probiotics release were tested. The results showed that thyme oil has a positive effect on probiotics growth both in free and encapsulated form. Gradual release of LAB from particles into the medium over 15 days and their antimicrobial activity were confirmed. In conclusion, due to their synergistic effect, the combination of essential oils and probiotics appears promising strategy in the field of active nutritional supplements.
