Camomilla has been used for thousands of years in traditional medicine to treat different diseases[1]. The dried flowers are one of the most popular single ingredients herbal teas that have potential health benefits[2]. Common sources for lecithin extraction to subsequently form liposomes are soya bean, egg yolk and sunflower that are widely used in pharmaceutical, food and cosmetic industries. The aim of this work is to encapsulate extract of Matricaria chamomilla that is rich in total phenolic content, antioxidants and shows inhibition against pathogenic strains. Various types of lecithin extracted from soya bean, egg yolk and sunflower have been used to evaluate encapsulation efficiency and long-term stability. Four types of solvents were used for preparation of camomilla extracts – distilled water, 20 % ethanol, acetone and hexane. Polar solvents were added to dry herb Matricaria chamomilla at concentration 0,1 g dry weight/mL and the samples were incubated at 37 °C while shaking for 24 hours. After incubation, centrifugation was performed and supernatants were used for characterization. Oils were prepared by hexane extraction with automatic Soxtherm equipment. Subsequently extracts were characterized for their total phenolic and flavonoid content, antioxidant and antimicrobial activity against selected grampositive and gramnegative bacterias. Eventually ethanol extracts were encapsulated into various liposome particles and their size and stability was analysed. Ethanol extract showed the highest amount of bioactive compounds, especially high total content of phenolic compounds. All liposome particles were stable and obtained high encapsulation efficiency with good ability to slowly release bioactive compounds. Prepared particles can be considered as safe and used in food and cosmetic industry.
